23 Dec Broccoli, pepper and hazelnut salad with feta cheese
A lovely simple salad to serve in winter time – my inspiration came from a much loved salad that Avoca sell in their shop and cafe. I’m using a jar of peppers here which have a lovely flavour.
1 large floret of broccoli, broken or cut into very small florets
1 small red onion, finely sliced
1 small clove garlic, crushed
1/2 jar of mixed peppers, sliced I used Jamie Oliver’s from Dunnes supermarket
1/2 packet of feta cheese crumbled
small handful of toasted and skinned hazelnuts, lightly crushed
Dressing
4 tbsp oil from the peppers in the jar
1 tbsp white wine vinegar
1 tsp honey
1/4 tsp salt
Good grind black pepper
Place the florets into a large bowl and pour boiling water over them so they are well covered and leave for 5 to 10 minutes. Drain and set aside.
Mix the dressing ingredients together in a medium size bowl. Add the onion and garlic and stir well to coat.
Add the sliced peppers and then the broccoli and stir well to coat.
Stir in the feta cheese and Sprinkle over the hazelnuts,
