04 Nov Veggy and tofu fritters (vegan)
Delicious easy to make fritters for supper or lunch or lunch boxes – serve with a salad and some relish.
100g gram flour (chickpea)
150g water
1 tsp each turmeric, cumin, coriander, vegetable bouillon, himalayan salt
1/4 tsp chilli flakes
Whisk all these ingredients together in a large bowl until you have a thick batter.
Then mix in:
100g grated very firm tofu (dry on kitchen paper before grating)
1 small courgette
1 carrot
1 small sweet potato
Some shredded kale or other green leafy vegetable
1 small chopped red onion
Coconut oil for frying
Sesame seeds
Heat up a tablespoon of coconut oil in a large frying pan and when hot drop spoonfuls into the oil and spread out a little with the back of a spoon and sprinkle on some sesame seeds. Flip over after a few minutes and cook until golden brown on both sides.
