Dark chocolate peanut butter cups

I was in America recently and discovered a ‘healthy’ version of Reese peanut butter cups and this is my take on that  version. I’m a great fan of peanut butter and chocolate a match made in heaven! These contain protein, fibre and antioxidants so they are sort of good for you!

100g good quality  70% dark chocolate
50g cacao butter buttons – I use ‘True’ make (from health food stores) or if you can use an extra 50g dark chocolate
2 tbsp peanut butter _ I like to use Suma brand (from heath food stores) plus extra for topping
1 tbsp honey or maple syrup
50g salted peanuts

Melt the chocolate and cacao butter together in a saucepan over hot water.
Stir in the honey and peanut butter and then the peanuts.
Spoon into a silicon chocolate mold or ice cube tray.
Take a half teaspoon measure and plop a small bit of peanut butter into the centre of each chocolate. This is optional or if you are travelling with these you might need to leave it out as the peanut butter stays soft.

Store in the fridge for a few weeks if they last that long!
