Really good salad dressing

This salad dressing is a staple in our house – heart healthy extra virgin olive oil, balsamic and cider vinegar, some good raw honey and some dijon mustard. Add herbs or garlic if you like.

120ml extra virgin olive oil
1 tbsp balsamic vinegar
1 tbsp apple cider vinegar
1 tbsp raw honey (or good honey)
1 tbsp dijon smooth mustard
salt and black pepper to taste

Place all the ingredients into a small bowl and whisk together till they combine. If it doesn’t come together – leave for a few minutes and whisk again – it should come together then. If it is too thick add a few drops of water and whisk.
Store in a glass lidded jar in the fridge – keeps for a few weeks as it is or if you add garlic or fresh herbs about a week.
